Breakfast OR Dinner Kale and Egg Scramble

This recipe combines power greens with protein. Add in the lard to kick up the keto vibes!

Time: 15 mins
Serves: 1-2 people

Ingredients:

  • 1 tbsp of oil or lard
  • ¼ c chopped onions
  • 1-2 handfuls of kale, stems removed and chopped fine
  • 2-3 eggs
  • ¼ c organic black beans
  • 1 handful broccoli sprouts
  • 1 c cooked brown rice, sprouted corn OR 2 Siete tortillas
  • 1 tsp paprika
  • Salt & pepper
  • Optional: hot sauce or salsa

Directions:

  1. Sautée onions and kale over medium/high heat in lard until tender – 5 minutes
  2. Add in eggs, beans, paprika, salt and pepper and scramble until eggs are cooked through
  3. Serve over rice, corn or wrapped up in tortilla with sprouts with your favorite hot sauce or salsa
