Corn allergy and sensitivity can stem from the inability to digest the corn protein Zein fully. It is a large protein very similar in structure to gluten and rye. This protein contains the amino acid sequences that resemble gluten proteins. Many people cannot break down these proteins in the digestive tract. Because of this, semi-broken down molecules end up in the small intestine and disrupt the digestive process. In some cases, this can contribute to leaky gut.

Also, modern corn is a highly genetically modified food that it’s hard for our bodies to digest. The GMO have very high sugars that may spike your blood sugar! This can negatively affect your metabolism and insulin levels, making it harder for your body to burn fat.

Corn is also high in cellulose and insoluble fiber. This fiber is hard to digest and can cause more gas, bloating, or even undigested corn particles in your stool.
