Miso Salmon with Lime Ginger Glaze

This simple salmon feature a delicious sweet and umami glaze.  Eat it alongside rice, over a salad, or by itself!

Time: 20 minutes cook time, 1 hour marinade time

  1. Pre heat oven to 400° F
  2. Whisk together the miso paste, lime juice, mirin, ginger and toasted sesame oil in a mixing bowl.
  3. Put the salmon in a baking dish, pour half the marinade mixture over the salmon, coating it well (reserve remaining marinade). Marinate salmon in the refrigerator for 1 hour.
  4.  Place the salmon in a baking dish with its marinade and 1/4 cup of water. Bake 8 to 10 minutes /€“ a few minutes longer if you have thick fillets.
  5. In a saucepan heat the reserved marinade until it starts bubbling. Pour over the salmon fillets and serve immediately.

*You can grill this dish too, but use caution, the sweetness of the marinade can burn easily if the grill is too hot. Before grilling, wipe the marinade off the salmon and rub the salmon with a teaspoon of sesame oil and wipe the grill with a teaspoon of sesame oil. Slow even heat is the trick to grilling this dish. Grill the salmon fillets four minutes on each side. This salmon is great served with Baby Bok Choy with Sesame and Ginger.
