Everything you crave in mashed potatoes, but much lighter on the stomach and contains the benefits of wonderful cruciferous vegetables.
Time: 15 mins
Serves: 2-4 people
Ingredients:
- 2 (16-ounce) packages riced cauliflower, or 1 large head cauliflower finely chopped (about 3 pounds)
- 3 Tbsp grass-fed ghee or coconut oil
- 2 cloves of garlic, finely chopped
- 2 c of water
- 1 tsp sea salt
- Optional: parsley garnish
Directions:
Boil cauliflower until soft and drain. Mix with butter and salt to taste and mash until smooth. Garnish with a sprinkle of fresh parsley.
Optional: Make tea from the boiled water to gain all of the nutrients that may have leeched into the water!
