Cauliflower Mashed Potatoes

Everything you crave in mashed potatoes, but much lighter on the stomach and contains the benefits of wonderful cruciferous vegetables.

Time: 15 mins
Serves: 2-4 people


  • 2 (16-ounce) packages riced cauliflower, or 1 large head cauliflower finely chopped (about 3 pounds)
  • 3 Tbsp grass-fed ghee or coconut oil
  • 2 cloves of garlic, finely chopped
  • 2 c of water
  • 1 tsp sea salt
  • Optional: parsley garnish


Boil cauliflower until soft and drain. Mix with butter and salt to taste and mash until smooth.  Garnish with a sprinkle of fresh parsley.

Optional: Make tea from the boiled water to gain all of the nutrients that may have leeched into the water!
