Roasted Parsnips ‘French Fries’

A great french fry alternative!

Prep Time: 15 mins
Bake Time: 30 mins
Serves: 2-4 people

Ingredients:

  • 2 pounds parsnips or carrots, peeled, cut into about 3 x 1/2-inch strips
  • 1 Tbsp fresh rosemary
  • 1 large garlic clove, minced
  • 3 Tbsp avocado oil
  • ½ tsp Himalayan Pink Salt
  • Freshly ground pepper
  • Kosher salt, freshly ground pepper
  • Optional: 1/2 tsp ground cumin

Directions:

  1. Preheat oven to 450°.
  2. Mix parsnips, rosemary, garlic, and oil on a baking sheet.
  3. Season with salt and pepper and toss to coat. Spread out in a single layer.
  4. Roast for 10 minutes; turn parsnips and roast until parsnips are tender and browned in spots, 10/€“15 minutes longer.
  5. Sprinkle with 1/2 tsp. cumin. Season to taste with salt, pepper, and more cumin, if desired.
