Coconut sugar has a much lower glycemic index than traditional cane sugar. These energy packed muffins will keep you fueled for hours.

Makes: 10-15 muffins
Directions:
- 3 very ripe bananas
- 2 tbsp coconut oil
- 1/3 c honey or maple syrup
- 1-2 tbsp coconut sugar
- 3 eggs
- 1 tsp vanilla extract
- 1 c almond meal
- 1 c gluten-free oats
- 1/3 c cacao powder
- 1 tsp baking soda
- 1 tsp baking powder
Optional: Lilly’s Stevia Sweetened Chocolate Chips or cacao nibs
Instructions:
- Preheat oven to 350 degrees.
- Line a muffin tin with liners or spray muffin tin with coconut oil spray.
- Place peeled bananas in the bowl of a mixer. Beat until well mashed.
- Add coconut oil, honey, coconut sugar, egg, and vanilla, and continue to beat on medium until well combined.
- Add almond meal, oats, cacao, baking soda, and baking powder and beat on low until well combined. Stir in ¼ cup of chocolate chips.
- Scoop batter into the prepared muffin liners. Sprinkle with remaining chocolate chips. Bake 18 minutes, or until a toothpick comes out clean.
