Jackfruit ‘Pulled Pork’ Tacos

All of the heartiness you crave in tacos, without all of the meat.

Serves: 1-2 people


  • 2-4 oz Jackfruit (frozen, canned, or fresh)
  • 1-2 sprouted corn tortillas
  • 2 Tbsp black beans or re-friend beans
  • 1/2 of a tomato, diced
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp chili powder


  1. Sautée jackfruit with tomatoes, onion, garlic powder, and chili powder until the jackfruit becomes soft and fragrant (3-5 minutes).
  2. Layer beans and Jackfruit onto a tortilla. Top with cilantro and extra diced tomatoes.
