Time: 20 minutes
Serves: 2-3 people
Ingredients:
- Two fillets of sustainably raised salmon
- 1 Tbsp extra virgin olive oil
- 1/8 tsp sea salt and ground pepper
- 1/4 c salsa
- Juice of 1 lime
- 1 small bunch of fresh cilantro, chopped
Directions:
- Heat over to 425 degrees F
- Pat salmon dry with a paper towel and coat with olive oil, salt and pepper
- Roast in oven skin side down: roasting time depends on the thickest part of your fillet. For every half-inch of thickness, roast 4 to 6 minutes. Salmon is done when easily flaked.
- Squeeze lime over salmon and serve with salsa and cilantro over a bed of greens. Option to add a side roasted root vegetables!
