These pumpkin pancakes are perfect for the first snowy fall day of the year. They’re sweet, savory and will satisfy all of your pumpkin spice cravings.

Ingredients:
- ½ can pumpkin puree
- ¼ c gluten-free pancake mix
- 4 eggs
- 1 Tbsp maple syrup
- ¼ tsp Himalayan pink salt
- 1 tsp vanilla extract
- 1 Tbsp coconut oil
- 1 tsp cinnamon
- Optional: 1 Tbsp of butter and maple syrup
Directions:
- Blend all ingredients blender until smooth.
- Cook like regular pancakes in butter or coconut oil.
- Optional: combine butter and maple syrup in a sauce pan and drizzle over pancakes to make even more decadent!
