Low Glycemic-Index Blueberry Muffins

Serves: 8-10 muffins

Ingredients:

Directions:

  1. Preheat oven to 325 degrees.
  2. Line muffin tin or grease with coconut oil spray.
  3. Prepare chia eggs so it has a  a few minutes to gel.
  4. Place dry ingredients in large bowl, and stir to combine.
  5. Mix coconut oil, honey, lemon juice and vanilla extract with chia /€œegg/€.
  6. Mix all ingredients together. Be careful not to over mix!
  7. Fold in blueberries
  8. Fill muffin cups 3/4 full.
  9. Bake for 22-25 minutes, or until golden brown
