Serves: 8-10 muffins
Ingredients:
- 1 c organic almond flour
- 1 c organic oats
- 1/2 tsp baking soda
- 1/8 tsp sea salt
- 3 “chia seed eggs” (3 Tbsp chia seeds with 9 Tbsp water mixed)
- 1/4 c honey or organic maple syrup
- 1 Tbsp coconut oil, melted
- 1 Tbsp lemon juice
- 1 tsp vanilla extract
- 1 c organic blueberries, fresh or frozen
Directions:
- Preheat oven to 325 degrees.
- Line muffin tin or grease with coconut oil spray.
- Prepare chia eggs so it has a a few minutes to gel.
- Place dry ingredients in large bowl, and stir to combine.
- Mix coconut oil, honey, lemon juice and vanilla extract with chia /€œegg/€.
- Mix all ingredients together. Be careful not to over mix!
- Fold in blueberries
- Fill muffin cups 3/4 full.
- Bake for 22-25 minutes, or until golden brown
