Smoked Trout Salad

Smoked meats are a quick, easy and delicious way to upgrade your salads and protein intake.  We love the anti-inflammatory properties of fish and all of the omega-3 fatty acids they contain!

Serves: 2


  • Local smoked trout – find at your local co-op!
  • 2 c or more of local arugula or greens
  • 1/4 c local micro greens
  • Balsamic vinegar glaze
  • 1 Tbsp Extra virgin olive oil
  • Juice of 1 lemon
  • Fresh herbs of choice: basil, mint, rosemary, cilantro, chives, etc.
  • Black pepper
  • Optional salad toppings: red onion, carrots, avocado, bell peppers, nuts, etc.


  1. Combine greens in a bowl.
  2. Top with 1 trout broken into pieces and drizzle glaze, olive oil and lemon juice over salad & fish.
  3. Garnish with fresh herbs and fresh ground black pepper.
