An easy and sneaky way to add more vegetables into your day!
Time: 45 mins including cook time
Serves: 2-4 people
Ingredients:
- 1 spaghetti squash, halved
- 2 Tbsp olive oil
- 2 cloves garlic crushed
- 1 Tbsp butter or olive oil
- Optional toppings:
- 1 bottle of all-natural spaghetti sauce
- Pesto Sauce
- Side of shrimp, salmon or halibut
- Organic cooked ground beef or turkey
- Sea salt & black pepper to taste
Directions:
- Preheat oven to 375F.
- Slice the spaghetti squash in half lengthwise so that two shallow halves remain. Scoop out the seeds and inner portion of the squash, and then sprinkle with sea salt and black pepper.
- Place both halves face down on a baking sheet.
- Roast for 35-45 minutes until the flesh of the squash becomes translucent in color.
- Use a fork to scoop the flesh out from the inside of the skin into a large serving bowl. Add in the butter/oil and crushed garlic and toss. Add your topping of choice and serve. Yum!
