Bacon Egg & Cheese Gluten Free Muffins

A deliciously extravagant and quick breakfast! You can make these ahead and eat them throughout the week… heat up and add a bit of butter or ghee once they begin to firm up.

Time: 25 minutes

Serves: 6-8 muffins


  • 6 strips of cooked Organic nitrite/nitrate free bacon or cooked crumbled sausage (If local meat is not available, we love Applegate Farm)
  • 3 eggs
  • 1/„4 tsp sea salt
  • 4 oz cheddar cheese or Daiya cheese alternative
  • 3 Tbsp coconut flour
  • Coconut oil or bacon grease for greasing muffin tins


  1. Blend eggs, salt & a little bacon or sausage grease in a bowl.
  2. Combine flour, cheese, & breakfast meat with the egg mixture.
  3. Pour in muffin tins and cook at 400 for 15 minutes, or until a toothpick comes out clean after inserted.
