Everything you crave in a french fry, without the heavy starch belly and saturated cooking oils. These eggplant fries are a fun appetizer or snack. Try serving with our avocado cilantro sauce!

Ingredients:
- 1 Medium Eggplant, peeled and cut into fry shaped pieces
- 2 eggs, beaten
Quinoa Mixture:
- 1/„2 c of uncooked blended quinoa, or quinoa flour
- 1/„2 tsp of Dried Basil Leaves
- 1/„2 tsp of Dried Garlic
- 1/„4 c of Grated Parmesan Cheese (Optional)
- Sea salt and pepper to taste
Directions:
- Dredge eggplant in eggs, then coat them in the quinoa mixture.
- Place them on a baking sheet and sprinkle sea salt & pepper then bake at 375 for 20 minutes or longer for crispiness.
