Baked Eggplant French Fries

Everything you crave in a french fry, without the heavy starch belly and saturated cooking oils. These eggplant fries are a fun appetizer or snack. Try serving with our avocado cilantro sauce!

Serves: 3-4


  • 1 Medium Eggplant, peeled and cut into fry shaped pieces
  • 2 eggs, beaten

Quinoa Mixture:

  • 1/„2 c of uncooked blended quinoa, or quinoa flour
  • 1/„2 tsp of Dried Basil Leaves
  • 1/„2 tsp of Dried Garlic
  • 1/„4 c of Grated Parmesan Cheese (Optional)
  • Sea salt and pepper to taste


  1. Dredge eggplant in eggs, then coat them in the quinoa mixture.
  2. Place them on a baking sheet and sprinkle sea salt & pepper then bake at 375 for 20 minutes or longer for crispiness.
