Easy Tomato Basil Pasta Sauce

Pasta sauce is easier than you think! Avoid the canned tomato sauce aisle and whip this easy recipe.  The best part of homemade sauce is your house will smell amazing for the rest of the day!

Time: 30-60 minutes

Serves: 3-4

Ingredients:

  • 1 onion, diced
  • 3 cloves of garlic, crushed
  • 1-2 Tbsp walnut or almond oil or rendered duck fat (find at any Co-op in the meat freezer)
  • 3-4 fresh tomatoes (pureed), or 1 box POMI crushed tomatoes
  • Pinch of Xylitol sugar or raw clover honey – local is best!
  • 1 tsp crushed red pepper flakes (optional for spice)
  • A pinch of sea salt
  • 1 c fresh basil, chopped

Directions:

  1. Sauté onions & garlic in preferred fat until translucent, appx. 5 minutes.
  2. Add tomatoes and bring to a simmer for 5-10 minutes.
  3. Add sweetener to cut the acidity of tomatoes and sea salt and red pepper flakes.
  4. Cook 5-30 minutes depending on time constraints. The longer you simmer the better the taste! Add basil last 5 minutes of cooking. If you are missing the taste of wine in your sauce, try a little rice wine or 1/4 c of beer.
