Pesto is not only delicious and versatile, but it’s packed with nutrients thanks to the fresh basil, garlic and healthy fats.

Ingredients:
- ¼ c walnut oil
- ¼ c walnuts or macadamia nuts
- 2 c fresh basil
- 2 cloves garlic
- ¼ c grated parmesan
- Pinch of sea salt (to desired taste)
- Water to desired consistency
Directions:
- Place all ingredients except water and oil in a food processor or blender.
- Blend and while blades are running, slowly pour walnut oil through shoot. You will probably need to stop & push contents down into bottom of blender. Add water or more oil to desired consistency.
- Stir into pasta, spread on toast, use as a salad dressing. Get creative! Save the leftovers in ice cube treys and freeze them.
