Fresh Herb Salad Dressing

Time: 5 mins
Serves: 2-4 salads

Ingredients:

  • 1/„2 cup walnut or almond oil (camelina or flax oil will work but will alter the flavor)
  • 1/„2 cup rice wine vinegar or distilled vinegar
  • 1/3 cup mirin
  • 1/„4 c pineapple juice (if tolerated) or 1 drop of lemongrass essential oil
  • 1 tbsp fresh mint, parsley, cilantro or basil
  • Pinch of sea salt & pepper to taste

Directions:

Place all ingredients except oil in the blender. Blend on low as you gradually add oil. This gives it a whipped and creamy texture!
