Mushroom & Spinach Scramble

An omelet scramble is a great way to kickstart your day with a handful of veggies and a protein boost.  This recipe features either goat cheese or feta cheese for an extra creamy consistency.

Time: 15 mins

Serves: 1-2

Ingredients:

  • 1 c baby spinach
  • 1 Tbsp butter
  • 1/2 c mushroom of choice, diced (we love shiitake or button!)
  • 1 garlic clove, minced
  • 2 large eggs lightly beaten with whisk or fork
  • Pinch of sea salt
  • Ground black pepper
  • 1 oz feta or goat cheese
  • Optional garnishes: a sprinkle of paprika and micro greens

Directions:

  1. Heat butter in pan on med.
  2. Add mushrooms and garlic. Cook until soft.
  3. Add spinach and cook until wilted to half its size.
  4. Pour eggs, salt and pepper into pan and scramble along with mushrooms and spinach. Add cheese at the end once eggs are cooked to your desired texture. Top with micro greens and paprika!
