Easy and amazing. While the chicken cooks, take the down time to clean the kitchen and prepare to eat!
Time: 40 minutes including cook time
Serves: 3-4 people
Ingredients:
- 1 pound of organic chicken thighs and/or drumsticks – skin on or skin-less, your preference
- 1 tsp cumin, garlic powder, black pepper & sea salt
- 1 Tbsp olive oil
- Juice of 1/2 lemon
- Optional to add baby spinach, sprouts, sunflower seeds, fresh herbs or goat cheese on top
Directions:
- Combine cumin, garlic powder, pepper and sea salt
- Rub chicken thighs with olive oil, followed by spice blend
- Bake at 450 degrees F or grill until meat is firm and cooked through
- Remove from heat and drizzle lemon juice and more olive oil over top
- Serve with any optional toppings
- Keep the leftovers in an airtight container and add to a goddess bowl or superfood salad the next day!
