Roasted Garlic Caesar Salad Dressing

The taste and smell of fresh roasted garlic is something special.  This dressing features an entire head of roasted garlic that contains wonderful healing properties and a delicious umami flavor.

Time: 50 minutes

Serves: 4-6 servings


  • ½ c whole raw almonds, soaked in water over night
  • 1 whole head of garlic for roasting
  • ½ clove garlic to add to dressing
  • ¼ c extra virgin olive oil
  • 4 tsp fresh lemon juice
  • 1 tsp Dijon mustard
  • ¼ to ½ tsp sea salt
  • ¼ tsp dry mustard
  • ½ tsp freshly ground black pepper


  1. Drain & rinse soaked almonds.
  2. Roast garlic head in oven 450 degrees for 30-40min. Let cool 15 minutes, or until cool enough to handle.
  3. Squeeze garlic cloves into blender or food processor.
  4. Add soaked almonds & remaining ingredients and blend..adding up to a ¼ c water to desired consistency.
  5. Store in a jar and top romaine lettuce w/ dressing.
