The taste and smell of fresh roasted garlic is something special. This dressing features an entire head of roasted garlic that contains wonderful healing properties and a delicious umami flavor.
Time: 50 minutes
Serves: 4-6 servings
Ingredients:
- ½ c whole raw almonds, soaked in water over night
- 1 whole head of garlic for roasting
- ½ clove garlic to add to dressing
- ¼ c extra virgin olive oil
- 4 tsp fresh lemon juice
- 1 tsp Dijon mustard
- ¼ to ½ tsp sea salt
- ¼ tsp dry mustard
- ½ tsp freshly ground black pepper
Directions:
- Drain & rinse soaked almonds.
- Roast garlic head in oven 450 degrees for 30-40min. Let cool 15 minutes, or until cool enough to handle.
- Squeeze garlic cloves into blender or food processor.
- Add soaked almonds & remaining ingredients and blend..adding up to a ¼ c water to desired consistency.
- Store in a jar and top romaine lettuce w/ dressing.
