Salmon Salad in Cucumber Boats

This simple salad is packed with protein and omega-3 fatty acids and makes for a great after school snack or dinner appetizer.

Time: 15 minutes

Serves: 1-2

Ingredients:

  • 1 can bpa free salmon, or fresh chicken pieces (cooked)
  • 1 celery stick, diced into bits
  • ½ sweet onion or scallions, diced
  • 1 Tbsp Vegenaise
  • 1 tsp mustard
  • 1 tsp fresh or dried dill
  • ¼ c fresh parsley
  • ½ lemon, juiced
  • 1 cucumber

Directions:

  1. Toss all ingredients except cucumber into a bowl until well combined
  2. Cut cucumber into 2/€ slices and scoop out middle with melon baller or spoon… set aside cucumber meat and save for later of add to the salmon salad!
  3. Fill cucumber boats with salmon salad and serve with ground pepper and a dash of sea salt, and any additional vegetable bits you have left over!
