This simple salad is packed with protein and omega-3 fatty acids and makes for a great after school snack or dinner appetizer.
Time: 15 minutes
Serves: 1-2
Ingredients:
- 1 can bpa free salmon, or fresh chicken pieces (cooked)
- 1 celery stick, diced into bits
- ½ sweet onion or scallions, diced
- 1 Tbsp Vegenaise
- 1 tsp mustard
- 1 tsp fresh or dried dill
- ¼ c fresh parsley
- ½ lemon, juiced
- 1 cucumber
Directions:
- Toss all ingredients except cucumber into a bowl until well combined
- Cut cucumber into 2/€ slices and scoop out middle with melon baller or spoon… set aside cucumber meat and save for later of add to the salmon salad!
- Fill cucumber boats with salmon salad and serve with ground pepper and a dash of sea salt, and any additional vegetable bits you have left over!
