Squashes are great veggies that add not only healthy carbohydrates to a meal but also are a good source of vitamin C, magnesium, and beta-carotene.

Serves: 3-4 people
Ingredients:
- 1 large acorn squash
- 1-2 c cooked lentils
- 1 tsp cumin, garlic salt, sea salt, turmeric
- 1 Tbsp olive oil
- 1/4 c chopped green onions
- 1/4 c chopped carrots
- 1/2 c finely chopped kale or spinach
- Garnish options: fresh herbs, toasted pumpkin or sunflower seeds, sprouts, 1/2 lemon, olive oil
Directions:
- Cut squash in half and remove seeds
- For the stuffing mix the remaining ingredients in a bowl
- Fill the squash with the stuffing
- Bake at 375 degrees F for 30-40 minutes or until squash is soft
- Remove from oven and add garnishes
- Serve with an extra drizzle of olive oil and a squeeze of lemon juice for a citrusy pop, or avocado cilantro dressing.
