Stuffed Acorn Squash

Squashes are great veggies that add not only healthy carbohydrates to a meal but also are a good source of vitamin C, magnesium, and beta-carotene.

Time: 60 mins
Serves: 3-4 people


  • 1 large acorn squash
  • 1-2 c cooked lentils
  • 1 tsp cumin, garlic salt, sea salt, turmeric
  • 1 Tbsp olive oil
  • 1/4 c chopped green onions
  • 1/4 c chopped carrots
  • 1/2 c finely chopped kale or spinach
  • Garnish options: fresh herbs, toasted pumpkin or sunflower seeds, sprouts, 1/2 lemon, olive oil


  1. Cut squash in half and remove seeds
  2. For the stuffing mix the remaining ingredients in a bowl
  3. Fill the squash with the stuffing
  4. Bake at 375 degrees F for 30-40 minutes or until squash is soft
  5. Remove from oven and add garnishes
  6. Serve with an extra drizzle of olive oil and a squeeze of lemon juice for a citrusy pop, or avocado cilantro dressing.
